Every evening for the last two week our little man has been itching to get out into the garden to check on our strawberries. He can be heard shouting “Are they red yet?” We have to try get to them before he does or he’ll eat them straight from the plant!
2 Egg whites
125g (4.5oz) Icing sugar
Handful of chopped fresh strawberries
- Preheat the oven to 150°C.
- Put the two egg whites in a bowl and sieve in the icing sugar, whisk on high speed until stiff white peaks form.
- Grease a baking tray and spoon the meringue on, put in the oven for 50-60mins.
- Whip the cream.
- Take the meringue out of the oven and let cool. When cool break into a bowl and fold in the whipped cream and chopped strawberries.
